It was not “perfectly” smooth because bits of leek and potato remained, but very small bits.

I now have a giant vat of soup with no possible way to eat it all. Made you Potato-Leek Soup last night. I halve the recipe (for three of us) and the volume is perfect.

I wouldn’t of used the thyme, but it worked.

Later I did eventually add bacon bits for a second helping and just as delicious! Also, made with veggie stock (vegetarians) at dinner and it’s naturally gluten-free for me (celiac). Drizzled with fresh lemon as others suggested… totally made the soup.

I used soy cream and vegan margarine to make it cruelty-free and was blown away. I removed half the soup before the cream was added for freezing.

It was amazing. I think the Yukon potatoes are the very best to use in this recipe.

This is, hands down, the best use of leeks and the best recipe for potato leek soup I’ve tried. So good.

I made this last weekend for my family. Hi Jill, I would cook the bacon separately until nice and crisp, and then serve it as a garnish on top of the soup. Just perfect! But I like the flavor of the potato to come through, so I use half and half instead of cream, and a lower ratio of dairy to potatoes than most recipes call for. However, I have white potatoes~will that alter the taste of the soup in a negative vain? Both amazing. You know i added fried Ham/ Bacon as well and bit of spicy green chillie,s as we love hot food.

It is the perfect base soup to enhance and create more varieties. Made 1 1/2 gallons for work. Wonderful, Excellent, Delicious! I did add a little bit of the bacon grease (cooked a few strips of bacon to top the soup off) to the pan when I was sauteing the leeks. I’m not impressed, guessing you delete the bad reviews, going by the salt content in canned food I imagine you flavour with salt.
