I’m wondering about eating coconut flour RAW. Is the nutritional info calculated without the frosting? We used a 7″ pan! This means I cannot have cream cheese, but I really miss cream cheese frosting. xoxo!

I made this recipe and it was delicious, really superb but I have a question: can a person use cashew butter for the frosting or would that not taste the same as using the raw, soaked cashews? We love carrot cake and find that to normally buy a slice from a bakery they are dry and simply not that tasty. M. I don’t have a food processor so I made this with my Breville blender. xo. xo. I may have skimped on the dates. Otherwise I’m not sure. I use my carrot pulp in green salads after I juice the carrots…..works great! Trying to break apart dates itself was a challenge and the final mixing had to be done by hand cos everything started to stick and get puréed. I’d recommend trying allspice in place of cinnamon. Then use a hot knife to carefully cut out slices and enjoy. I have a small food processor so I had to mix everything in batches (a large one is going on my holiday wishlist), but it was still really straightforward and easy! Glad you dig our food! But full fat works, well too! but the cream result was not white! But you could sub raw honey if that works better for your needs! I had a discussion with my mom about what makes a good carrot cake, and her advice was to include pineapple. Hmm, coconut flour has never been an issue for us. I made this for our family gathering using a GF oat crust. We think it should be fine. At this point, you can enjoy the cake by carefully lifting or sliding the cake out of its pan. Just be sure to bake it! I think it would be good as energy balls without the coconut flour and raisins. Beautiful recipe and cake! Was going to make a vegan cream cheese whipped frosting because I’m out of cashews, but do you think sunflower seeds could be subbed for the cashews in the frosting? I know my colleague will love this cake x. I’d suggest a blend though vs. a 1:1 swap! Using a box grater or the grater attachment on your food processor, grate the carrots and set aside. The coconut cream will add more fat so the frosting will be slightly creamier. It says a “high speed blender’ for the icing. Hope this helps!

It was LOVED by everyone! Best and easiest carrot cake ever! By mixing gently as opposed to blending in a food processor, you can keep a lighter, less dense, more "cake-like" texture. I have used dried pineapple and it tastes great without ruining the consistency:). Once well combined, set aside.

I read that you can add water to the pulp and blend it into a “smoothie” and pour it over house plants, wheat grass or your garden as fertilizer. It changed the whole recipe.
