Indeed - the Willett Distillery in Bardstown is a very new one and started production in 2012, after the old family owned distillery had been closed in the 1980s.

It has tons of flavor and it’s really interesting. I’ve tasted a couple elsewhere, but too long ago to have a good finger on distinct notes. One of the highest proof of our lineup (this bottle coming in at 110.8 proof), and combining those extra proof points with the complexity of the spicy fruits makes for sorcery on the finish. This is certainly a killer budget pour bringing a good amount of fruit with it. There’s vanilla and a bit of caramel in there but I can’t help but pick up the floral maraschino as the only interesting characteristic. I don’t love those less than the songs that just make me smile every time I hear them. One of the things that continue to make Willett somewhat difficult to decode when it comes to their mashbill is that they use six different recipes and unlike Four Roses, they are not as transparent about how those recipes are used.

But I think this bottle will take me a while to get through. In wanting to try as many things from the Willett lineup as possible, I wound up collecting a number of bottles and getting to experience how the profiles vary. I don’t know what their method is.
